savory australian lamb loin chops
with red peppers and herbs recipe
Recipe Serves 4
AUSTRALIAN LAMB
8 Australian lamb loin chops, 1 ½ inch thick (2 per person)
SEASONING BLEND
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon thyme, dry
1 teaspoon savory, dry
1 teaspoon basil, dry
PAN SAUCE
3 tablespoons olive oil
1 large red bell pepper, seeded and cut into strips
8 cloves garlic, peeled, whole
1 cup dry white wine
1 teaspoon fresh summer savory or sweet basil, chopped
1 teaspoon fresh basil, chopped
1 teaspoon fresh tarragon, chopped
Combine the seasoning blend in a small bowl.
Coat the meat with the seasoning blend. Heat 2 tablespoons olive oil in a large skillet and brown chops on both sides for 3-4 minutes.
Remove chops and pour off fat. Add remaining 1 tablespoon oil, red peppers and garlic. Sauté vegetables, stirring frequently for 6 minutes or until peppers are soft. Add wine and fresh herbs, and return chops to pan. Cook for 10 minutes uncovered, until sauce is reduced by half. Turn chops over once or twice while cooking.
