Recipe Serves 6-8 Print Friendly

AUSTRALIAN LAMB

  • 1 Australian leg of lamb, bone-in
  • 4 eggs, whipped, for coating
  • 8 ounces butter, melted

SEASONED FLOUR

  • 1 cup flour
  • 2 tablespoons garlic salt
  • 1 teaspoon black pepper, crushed

BREADCRUMB MIXTURE

  • 1 cup breadcrumbs
  • 1 teaspoon basil, dry, crushed
  • 1 teaspoon marjoram, dry, crushed
  • 1 teaspoon thyme, dry, crushed
  • ½ teaspoon savory, dry, crushed

  1. Preheat oven to 450°F.
  2. Prepare seasoned flour and divide into two equal portions. Trim excess fat from meat. Dredge leg in half of the seasoned flour and dip into the whipped eggs.
  3. Blend breadcrumbs and herbs into remaining seasoned flour. Coat the meat with this mixture. Drizzle melted butter over the leg. Place leg on rack in baking dish and bake for 20 minutes at 450°F. Reduce heat to 375°F and roast for additional 20 minutes per pound or until internal temperature reaches 145°F.
  4. Remove lamb and let rest for 10 minutes. Slice one into ½ inch thick slices and serve.
