When lamb is in the refrigerator and time is short, what’s your fast, easy and delicious way to prepare lamb? What do you serve on the side?

Have you tried chops on the grill? We just rub them with a little olive oil and season them with salt and pepper. Add some asparagus to the grill, a quick side of pasta. I'd say it takes all of 20 minutes!

Lamb on the grill is the best, but in the winter, we just put a little marinade on and broil them in the oven. In minutes I've got a delicious dinner on the table.

When I don't have a lot of time I like to cut the lamb rack into chops. I just blend a little olive oil, rosemary & garlic in a bowl. I first rub a little salt and pepper onto each side of the chops, then I brush on the oil/rosemary/garlic mixture. Then I cook them on the BBQ. I love to serve my Australian lamb chops with couscous and green beans. I can knock this meal out in less than 30 minutes and it always seems like something special.

We usually keep a boneless leg of lamb in the fridge. It's quite easy to cut off a couple of thick steaks, Rub with good Olive Oil, then a simple seasoning of garlic, salt and fresh ground pepper. Throw them on the grill or under the broiler to taste, (I like medium rare!), add a salad and you have a delicious quick and easy meal. We also use the lamb by cutting a large chunk off, then cube and season. Thread on a skewer with veggies of choice and grill! Yumm!
