 I often see recipes that specify red peppers, most recently the one for Morracan skewers w/ red pepper sauce.  They never specify what kind of red peppers and I really would like to know.  I can assume that this is the red bell pepper, but there are other red peppers on the market.

 Your assumption is correct. Unless otherwise specified, use regular ol' sweet red bell peppers.
