I know its just summer but I was looking through some old online folders the other day and this made me think of fall. See what you think. LAMB NECK FILLET IN GUINNESS 4 trimmed lamb neck fillets or shanks 3 tbspns olive oil 1 large brown onion 2 cloves garlic 1 finely diced carrot 1 cup beef stock 1 can Guinness 1 sprig rosemary 1 bunch mint salt and pepper to taste Heat olive oil in a heavy pan or casserole, season then brown the lamb neck fillets or shanks, remove then add onion and garlic cook for 5 minutes returning the lamb. Deglaze pan with stock and Guinness put rosemary in and season to taste. Cook in a moderate oven (160- 170)for 2 hours or until tender, chop mint and stir into sauce. Rest for 10 minutes. Serve with creamy mashed potatoes or soft polenta and mushy peas.
