Between Thanksgiving and the December holidays, you’re probably planning more than one meal for family and friends before the New Year. Is Australian Lamb on your menu? If so, how are you planning on serving it? Cheers, Australian Lamb

My roommate and I have started the tradition of hosting Easter dinner. Every year we pull out the folding chairs and then head to Costco for Australian lamb. She prepares it with olive oil and garlic cloves before cooking. It's always a mega hit with our guests. I used to think WE were the draw for our guests, but I think it's the lamb!

Last year a crazy Aussie girl stayed at our place for Thanksgiving. She insisted on stuffing the turkey with this traditional Australian recipe commonly used Down Under for chicken. I freaked out because I was having guests over who knew nothing about it, anyway it went down a treat and after a few wines we christened it Barr Dunken, I have attached a photo of the stuffing, see what you think for this years Thanksgiving! Australian turkey stuffing – A.K.A. Barr Dunken! Stuffing for 10 pound turkey 2 tablespoons olive oil or 2 oz Smokey bacon cut into small strips 1 Brown onion finely chopped 1 pound of ground lamb 2 oz pine nuts 1 oz walnuts 3 oz dried cranberries 1 tablespoon chopped fresh rosemary 1 ½ cups of wholemeal bread – crumbed 2 cloves garlic thinly sliced Salt & pepper to taste Preparation: Render bacon in pan and add lamb, onion and garlic, cook until lightly browned. Remove from heat and rest. In a large bowl mix cooked lamb with crumbed bread, nuts and rosemary until all ingredients are combined. Stuff turkey, season and cook per manufacturer recommendations. Regards Ben
