COOKING GUIDE: RACK OF LAMB
Basic Cooking Instructions:
Preheat oven to 360°F. Season rack with salt and pepper or choose one of the four basting suggestions listed below. Cook for 30 min/lb. Remove from heat and rest 5 to 10 minutes before carving.

Lamb racks are most commonly roasted or cooked on the grill.

Lamb Cutlets:
To make lamb cutlets, cut a frenched rack of lamb between the rib bones to make individual chops. Common cooking methods for lamb cutlets are broil, sauté, and grill.
LAMB RACK BASTES:
For all bastes, simply combine ingredients in a small bowl and use for basting. Each of these suggestions will cover up to one medium 8-rib lamb rack.
Honey Roasted Rack of Lamb
- 3 tablespoons honey
- 3 tablespoons lemon juice
- 3 tablespoons soy sauce
- 2 teaspoons garlic, crushed
- salt and freshly ground black pepper, to taste
Greek-style
- 3 tablespoons lemon juice
- 3 teaspoons oregano
- 2 cloves garlic, crushed
- 1 teaspoon paprika
- salt and freshly ground black pepper, to taste
Classic Rosemary & Mint Jelly
- 3 tablespoons mint jelly
- 3 tablespoons Worcestershire sauce
- sprinkle of rosemary, dry
- salt and freshly ground black pepper, to taste
Herbed Mustard & Garlic
- 3 tablespoons country-style mustard
- ½ tablespoon French tarragon, chopped
- ½ tablespoon chives, chopped
- 1 tablespoon parsley, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, crushed
- salt and freshly ground black pepper, to taste
